Ingredients
- 1 goose, cleaned and prepared (4-5 lbs)
- 1 cup elderberries
- 1/2 cup red wine
- 1/2 cup chicken broth
- 2 tbsp butter
- Salt and pepper, to taste
Instructions

Preheat oven to 325°F.

Season the goose inside and out with salt and pepper.

Place the goose in a roasting pan and bake for 2 hours, or until the internal temperature reaches 165°F.

While the goose cooks, mix the elderberries, red wine, and chicken broth in a small saucepan and cook until the berries are soft and the sauce is thickened.

Strain the sauce through a fine-mesh strainer and stir in the butter.

Serve the goose with the elderberry sauce on the side.
