How To Make Soy Roast Duck with Hoisin Gravy

Ingredients
- 1 whole duck, about 4-5 lbs
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon Chinese five spice powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups chicken broth
- 2 tablespoons cornstarch
- 2 tablespoons water
Instructions

Preheat your oven to 350°F (175°C). Rinse the duck inside and out and pat dry with paper towels.

In a small bowl, mix together the soy sauce, honey, hoisin sauce, rice vinegar, Chinese five spice powder, garlic powder, onion powder, salt, and black pepper.

Rub the mixture all over the duck, inside and out. Place the duck on a roasting rack set inside a roasting pan.

Roast the duck in the preheated oven for about 2 hours, or until the skin is crispy and dark golden brown. Baste the duck with its drippings every 30 minutes.

While the duck is roasting, in a saucepan, combine the chicken broth and any leftover marinade. Bring to a boil and then reduce heat to simmer for 10 minutes.

In a small bowl, whisk together the cornstarch and water to make a slurry. Slowly pour the slurry into the simmering broth while whisking constantly. Continue to cook and whisk until the gravy thickens, about 2-3 minutes.

Once the duck is done, remove it from the oven and let it rest for 10 minutes before carving. Serve the duck with the hoisin gravy on the side.
