Ingredients
- 1 lb ground bison meat
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 tsp paprika
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 can (14.5 oz) diced tomatoes
- 2 tbsp tomato paste
- 4 hamburger buns
Instructions

Heat olive oil in a large skillet over medium-high heat.

Add the bison meat and cook until browned, breaking it up with a wooden spoon.

Add the onion, garlic, red and green bell peppers, paprika, chili powder, cumin, salt, and black pepper. Cook until vegetables are soft.

Add the diced tomatoes and tomato paste. Bring to a boil, then reduce heat and simmer for 10-15 minutes, until sauce has thickened.

Toast the hamburger buns and serve the bison sloppy joes on top.
