Savory bison and quinoa stuffed peppers with a kick of spice.

Ingredients
- 4 bell peppers, halved and seeded
- 1 lb ground bison
- 1 cup cooked quinoa
- 1/2 cup diced onion
- 1/2 cup diced tomato
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- Fresh cilantro for garnish
Instructions

Preheat oven to 375°F.

In a large skillet, cook bison over medium-high heat until browned. Drain excess fat.

Mix in cooked quinoa, onion, tomato, garlic powder, cumin, chili powder, salt, and pepper.

Stuff each pepper half with the bison and quinoa mixture.

Place stuffed peppers in a baking dish and cover with foil.

Bake for 30 minutes, then remove foil and top with shredded cheese.

Bake for an additional 10 minutes, until cheese is melted and bubbly.

Serve hot, garnished with fresh cilantro.
