How To Make Bison and Mushroom Risotto
Creamy risotto with savory bison and earthy mushrooms.
Serves:
Ingredients
- 1 lb bison meat, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 cups arborio rice
- 6 cups chicken broth
- 1 cup white wine
- 1/2 cup grated parmesan cheese
- 2 tbsp butter
- Salt and pepper, to taste
Instructions

In a large pot, heat the butter over medium heat. Add the bison meat and cook until browned on all sides. Remove from pot.

Add onion and garlic to the pot and cook until translucent. Add mushrooms and cook until tender.

Add in the arborio rice and stir until coated in the butter and vegetable mixture.

Add in white wine and stir until liquid is absorbed. Begin adding chicken broth, 1 cup at a time, stirring continuously until each cup of liquid is absorbed before adding the next cup.

When all the broth has been added and absorbed, stir in the cooked bison meat and parmesan cheese. Season with salt and pepper to taste.
