How To Make Whole Grain Stuffed Bell Peppers
Colorful bell peppers stuffed with nutrient-rich whole grains and flavorful veggies.

Ingredients
- 4 large bell peppers, tops removed and seeded
- 1 cup whole grain rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, chopped
- 1 carrot, chopped
- 1 cup canned diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper, to taste
- 1 cup shredded mozzarella cheese
Instructions

Preheat oven to 375°F.

Cook rice according to package directions.

Meanwhile, in a large skillet over medium heat, sauté onion and garlic until softened.

Add zucchini and carrot, and cook for 5-7 minutes.

Add canned tomatoes, oregano, basil, salt, and pepper. Cook for another 5 minutes.

Stir in cooked rice.

Stuff each bell pepper with filling mixture and place in a baking dish.

Cover with foil and bake for 30 minutes.

Uncover, sprinkle with shredded mozzarella cheese and bake for an additional 5-7 minutes until cheese is melted and bubbly.
