How To Make Whole Grain Black Bean Soup Recipe
A hearty, wholesome soup made with black beans and whole grains.
Serves:
Ingredients
- 1 cup brown rice
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp oregano
- 1 can black beans, drained and rinsed
- 4 cups vegetable broth
- Salt and pepper, to taste
- Optional toppings: cilantro, avocado, lime wedges
Instructions

Cook brown rice according to package directions.

In a large pot, heat olive oil over medium heat. Add onion and garlic and sauté until softened, about 5 minutes.

Add cumin, chili powder, and oregano and stir to combine.

Add black beans and vegetable broth and bring to a boil. Reduce heat and simmer for 20-25 minutes.

Add cooked brown rice and simmer for an additional 10 minutes.

Season with salt and pepper to taste.

Serve with optional toppings, if desired.
