How To Make Millet Pancakes

Ingredients

  • 1 cup millet flour
  • 1/2 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1 egg
  • 2 tbsp melted butter

Instructions

  1. In a large bowl, whisk together the millet flour, all-purpose flour, sugar, baking powder, baking soda, and salt.

  2. In a separate bowl, whisk together buttermilk, egg, and melted butter until well combined.

  3. Add the wet ingredients to the dry ingredients and whisk until just combined. Do not overmix.

  4. Heat a non-stick skillet or griddle over medium heat. Scoop 1/4 cup of batter onto the skillet for each pancake.

  5. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.

  6. Serve with your favorite toppings.
