How To Make Millet Pancakes

Ingredients
- 1 cup millet flour
- 1/2 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 1 egg
- 2 tbsp melted butter
Instructions

In a large bowl, whisk together the millet flour, all-purpose flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, whisk together buttermilk, egg, and melted butter until well combined.

Add the wet ingredients to the dry ingredients and whisk until just combined. Do not overmix.

Heat a non-stick skillet or griddle over medium heat. Scoop 1/4 cup of batter onto the skillet for each pancake.

Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
