How To Make Bulgur-Stuffed Peppers Recipe

Ingredients
- 4 large bell peppers, tops removed and seeds discarded
- 1 cup of bulgur wheat
- 2 cups of vegetable broth
- 1 tbsp of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp of cumin
- 1/2 tsp of paprika
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a saucepan, bring the vegetable broth to a boil. Add bulgur and reduce heat to a simmer. Cover and let cook for 10-12 minutes until tender.
- In a skillet, heat olive oil over medium heat. Add onion and garlic and sauté until softened.
- Add cumin and paprika to the skillet and cook for another minute.
- Stir in the cooked bulgur and mix well with the onion mixture. Season with salt and pepper to taste.
- Stuff peppers with the bulgur mixture and place them in a baking dish. Bake for 30-40 minutes, until the peppers are tender.
- Garnish with chopped parsley and serve hot.
