How To Make Bulgur and Chickpea Soup
A healthy and hearty soup made with bulgur and chickpeas.
Serves:
Ingredients
- 1 cup bulgur
- 1 cup cooked chickpeas
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp coriander
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh parsley, chopped
Instructions

In a large pot, heat the olive oil over medium heat.

Add the onion and cook until translucent.

Add the garlic, carrots, and celery, and cook for 5 minutes.

Add the bulgur, chickpeas, cumin, and coriander, and stir well.

Pour in the vegetable broth and bring to a boil.

Reduce heat to low, cover, and simmer for 20-25 minutes, or until the bulgur is tender.

Season with salt and pepper to taste, and garnish with fresh parsley.
