Ingredients
- 2 large aubergines
- 2 tbsp olive oil
- 1 tsp salt
- 1 cup plain yogurt
- 2 tbsp harissa paste
- Fresh mint leaves, for garnish
Instructions

Preheat the oven to 200°C (400°F).

Cut the aubergines in half lengthwise and score the flesh with a knife.

Drizzle the olive oil over the cut side of the aubergines and sprinkle with salt.

Place the aubergines on a baking sheet, cut side up, and roast in the preheated oven for 25-30 minutes, or until soft and golden.

In a small bowl, mix together the yogurt and harissa paste.

Once the aubergines are roasted, remove them from the oven and let them cool slightly.

To serve, spoon the yogurt and harissa mixture over the roasted aubergines.

Garnish with fresh mint leaves.
