- 10 tomatoes
- 2 onions
- 3 jalapeno peppers
- 4 garlic cloves
- 1 cup cilantro leaves
- 1/4 cup lime juice
- 1/4 cup white vinegar
- 1 tbsp salt
- 1 tsp cumin
- 1 tsp sugar
Instructions

Prepare a large pot of boiling water. Score tomatoes and blanch them for 1 minute, then place in an ice bath.

Peel tomatoes and remove seeds. Chop into small pieces and place in a large bowl.

Finely chop onions, jalapeno peppers, garlic cloves, and cilantro leaves. Add to the bowl with tomatoes.

In a separate bowl, mix lime juice, white vinegar, salt, cumin, and sugar. Pour over the tomato mixture and stir well.

Transfer the salsa mixture to a large pot and bring to a boil. Reduce heat and simmer for 2 hours, stirring occasionally.

While the salsa is simmering, prepare canning jars and lids by washing them in hot soapy water and sterilizing them.

Once the salsa has cooked, pour it into the sterilized jars, leaving 1/2 inch of headspace. Secure lids and process in a boiling water bath for 15 minutes.

Remove jars from the water bath and let them cool. Check for proper seal before storing.
