Ingredients

  • 3 dried guajillo chilies, deseeded and stems removed
  • 2 dried chipotle chilies, deseeded and stems removed
  • 2 cloves of garlic, minced
  • 1 small onion, chopped
  • 1 tbsp olive oil
  • 1 can (14 oz) diced tomatoes
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tbsp brown sugar
  • 1 cup vegetable broth
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat and toast the deseeded guajillo and chipotle chilies for about 2 minutes on each side. Remove from heat and let them cool. Once cooled, grind them into a fine powder using a food processor or mortar and pestle.

  2. In the same skillet, heat olive oil and sauté minced garlic and chopped onion until translucent.

  3. Add the ground chilies, diced tomatoes, tomato paste, smoked paprika, ground cumin, dried oregano, brown sugar, vegetable broth, and salt and pepper to the skillet. Stir well to combine.

  4. Bring the mixture to a boil, then reduce heat to low and let it simmer uncovered for about 20 minutes, stirring occasionally.

  5. Remove the skillet from heat and let the sauce cool slightly. Transfer it to a blender or use an immersion blender to blend until smooth.

  6. Taste and adjust seasoning if needed.

  7. Pour the sauce into a jar or container and let it cool completely before storing in the refrigerator.

  8. Use as a smoky and spicy condiment for tacos, burgers, grilled meats, or any dish that needs a kick of flavor.
