Ingredients

  • 2 tbsp olive oil
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1 tbsp black peppercorns, crushed
  • 1 cup beef or chicken broth
  • 1 cup heavy cream
  • 1 tbsp Dijon mustard
  • Salt, to taste

Instructions

  1. Heat olive oil in a saucepan over medium heat. Add shallot and garlic, sauté until translucent.

  2. Add crushed black peppercorns, stir for a minute to release the aroma.

  3. Pour in beef or chicken broth, bring to a simmer and cook for 10 minutes.

  4. Stir in heavy cream and Dijon mustard, simmer for another 5 minutes.

  5. Season with salt to taste.

  6. Remove from heat and let the sauce cool slightly.

  7. Transfer sauce to a blender and blend until smooth.

  8. Strain the sauce through a fine mesh sieve to remove any solids.

  9. Serve hot with your favorite meat or vegetables.
