Ingredients
- 2 large red bell peppers
- 1 clove of garlic
- 1/4 cup of mayonnaise
- 1/4 cup of Greek yogurt
- 1/4 cup of grated Parmesan cheese
- 1/2 teaspoon of smoked paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions

Preheat the oven to 425°F (220°C).

Place the red bell peppers on a baking sheet and roast in the oven for about 20 minutes, or until the skins are blistered and charred.

Remove the peppers from the oven and transfer to a bowl. Cover with a plate or plastic wrap and let them steam for 10 minutes.

Once cooled, remove the skins, stems, and seeds from the peppers. Chop the flesh into small pieces.

In a food processor or blender, combine the chopped peppers, garlic, mayonnaise, Greek yogurt, grated Parmesan cheese, smoked paprika, salt, and black pepper. Blend until smooth and creamy.

Transfer the dip to a serving bowl and refrigerate for at least 1 hour before serving.
