Ingredients
- 6 green Thai chilies, seeded and chopped
- 4 cloves of garlic
- 2 shallots, chopped
- 1 stalk of lemongrass, chopped
- 1 thumb-sized piece of ginger, peeled and chopped
- 1 tbsp of cilantro stems, chopped
- 1 tbsp of basil leaves
- 1 tsp of ground cumin
- 1 tsp of ground coriander
- 1 tsp of shrimp paste
- 1/2 tsp of ground white pepper
- 1/2 tsp of salt
- 1 tbsp of vegetable oil
Instructions

In a blender or food processor, combine the green Thai chilies, garlic, shallots, lemongrass, ginger, cilantro stems, basil leaves, ground cumin, ground coriander, shrimp paste, ground white pepper, and salt.

Blend until a smooth paste forms. You may need to scrape down the sides of the blender or processor a few times to ensure everything is well blended.

Heat the vegetable oil in a pan over medium heat. Add the green curry paste and cook for 2-3 minutes, stirring constantly, until fragrant.

Remove the pan from heat and allow the green curry paste to cool completely before using.

Store the green curry paste in an airtight container in the refrigerator for up to 1 week, or freeze in smaller portions for longer storage.
