- 2 tablespoons curry powder
- 1 tablespoon vegetable oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon ginger, grated
- 1 can (14 ounces) coconut milk
- 1 cup vegetable broth
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- Salt and pepper to taste

In a large saucepan, heat the vegetable oil over medium heat. Add the diced onion, minced garlic, and grated ginger. Cook until the onion is translucent and the garlic and ginger are fragrant.
