- 8 oz chorizo, sliced
- 2 cups cooked quinoa
- 1 cup hummus
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1 tbsp olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions

Heat olive oil in a skillet over medium-high heat. Add chorizo and cook until browned and crispy, about 5 minutes.

In a bowl, combine cooked quinoa, hummus, cherry tomatoes, cucumber, red onion, cilantro, lemon juice, salt, and pepper. Mix well.
