How To Make Carrot-Miso Dressing

Ingredients
- 1½cupscarrot juice,fresh
- 1medium carrot
- 1fresh ginger slice,(¾-inch thick), peeled
- 2tbsplime juice,fresh
- 1tbspsoy sauce
- 1tspmiso paste
- ½cuppeanut oil
- cayenne pepper
Instructions

In a small saucepan, boil the carrot juice for about 10 minutes until it is reduced to 3 tablespoons.

Transfer to a blender and let cool slightly. Add the chopped carrot, ginger, lime juice, soy sauce, and miso and blend until the carrot is minced.

With the machine on, add the oil in a thin, steady stream. Season with cayenne and transfer to a glass jar.
