- ½cupbeans,or lentils, cooked
- ½cupfresh mint,or cilantro, or Italian parsley leaves
- 1lemon juice
- 1large egg
- 1garlic clove
- 1cupextra virgin olive oil
- salt and pepper,to taste
Instructions

Combine the beans, herbs, lemon juice, egg, garlic, and oil in a food processor and blend until smooth for about 1 minute.

With the machine running, pour in the remaining oil through the feed tube in a thin, steady stream and to make a creamy and smooth sauce.
