Ingredients
- 2 large eggplants
- 2 cloves of garlic, minced
- 2 tbsp tahini
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1/2 tsp cumin
- Salt and pepper, to taste
- Assorted fresh vegetables (carrot sticks, cucumber slices, bell pepper strips)
Instructions

Preheat the oven to 400°F (200°C). Pierce the eggplants with a fork and place them on a baking sheet. Roast in the oven for 35-40 minutes, or until they are tender and the skins are wrinkled. Remove from the oven and let cool.

Cut the cooled eggplants in half lengthwise and scoop out the flesh. Discard the skins. Place the eggplant flesh in a food processor or blender.

Add the minced garlic, tahini, lemon juice, olive oil, cumin, salt, and pepper to the eggplant. Blend until smooth and creamy.

Transfer the Baba Ganoush to a serving bowl. Drizzle with extra olive oil and sprinkle with a pinch of cumin, if desired.

Serve the Baba Ganoush with a platter of assorted fresh vegetables for dipping.
