Ingredients
- 1 can black beans, rinsed and drained
- 1 can kidney beans, rinsed and drained
- 1 can chickpeas, rinsed and drained
- 1 bell pepper, diced
- 1/2 red onion, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper to taste
Instructions

In a large bowl, combine black beans, kidney beans, chickpeas, bell pepper, red onion, cherry tomatoes, and cilantro.

In a separate small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper.

Pour the dressing over the bean mixture and toss until well coated.
