How To Make Sunflower Seed and Beet Salad
A refreshing and healthy salad with the sweetness of beets and crunchy sunflower seeds.
Serves:
Ingredients
- 3 medium beets, peeled and cubed
- 1 cup of baby spinach leaves
- 1/4 cup of sunflower seeds
- 1/4 cup of crumbled feta cheese
- 2 tbsp of olive oil
- 1 tbsp of apple cider vinegar
- 1 tsp of honey
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F.

Toss the beet cubes with olive oil, salt, and pepper. Place them on a baking sheet and roast for 25-30 minutes, until tender.

In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper.

In a salad bowl, combine the roasted beets, baby spinach leaves, sunflower seeds, and crumbled feta cheese.

Drizzle the dressing over the salad and toss well to combine.
