  • 16 large mushrooms, cleaned and stems removed
  • 1 cup fresh spinach, chopped
  • 1/2 cup sunflower seeds
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a mixing bowl, combine spinach, sunflower seeds, Parmesan cheese, olive oil, salt, and black pepper.

  3. Stuff the mushroom caps with the mixture and place them on a baking sheet.
