Sweet and nutty roasted carrots with honey and seeds make a perfect side dish.

Ingredients
- 1 pound of carrots, peeled and trimmed
- 2 tbsp of honey
- 2 tbsp of olive oil
- 2 tbsp of pumpkin seeds
- 2 tbsp of sunflower seeds
- Salt and pepper to taste
Instructions

Preheat oven to 400°F.

In a bowl, mix together honey, olive oil, salt, and pepper.

Toss the carrots in the mixture until they are coated, then spread them evenly on a baking sheet.

Roast carrots for 20 minutes.

Sprinkle pumpkin and sunflower seeds over the carrots and roast for an additional 10 minutes, until they are golden brown.
