How To Make Mashed Potato Pancakes
Golden crispy potato pancakes made with mashed potatoes, perfect for breakfast or brunch.

Ingredients
- 2 cups of leftover mashed potatoes
- 1 egg
- 1/4 cup all-purpose flour
- 2 tbsp chopped chives
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 2 tbsp butter
- Sour cream and additional chives for serving
Instructions

In a large bowl, mix together mashed potatoes, egg, flour, chives, garlic powder, salt and pepper until well combined.

Heat a large skillet over medium heat and add 1 tbsp of butter.

Using a cookie scoop or tablespoon, form the potato mixture into pancakes and place in the skillet.

Cook for 3-4 minutes on each side until golden brown and crispy.

Repeat with the remaining potato mixture, adding more butter to the skillet as needed.

Serve hot with sour cream and additional chives.
