Ingredients
- 1/4 cup olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 10 oz fresh spinach
- 1 cup crumbled feta cheese
- 2 cups breadcrumbs
- 2 eggs, beaten
- Salt and pepper, to taste
Instructions

Preheat oven to 375°F.

Heat olive oil in a large skillet over medium heat. Add onion and garlic, and sauté for 3-5 minutes until softened.

Add spinach and cook until wilted, about 2-3 minutes.

Remove from heat and stir in feta cheese, breadcrumbs, eggs, salt, and pepper until fully combined.

Transfer mixture to a greased 9×9 inch baking dish.

Bake in preheated oven for 30-40 minutes, or until golden brown on top.
