Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1 cup canned corn
Instructions

Preheat oven to 375°F. Grease muffin tin or line with cupcake liners.

In a medium bowl, mix together cornmeal, flour, sugar, baking powder, and salt.

In a small bowl, whisk together milk, vegetable oil, and egg.

Add wet ingredients to dry ingredients and stir well. Add canned corn and mix until well combined.

Fill each muffin cup with batter until 3/4 full.

Bake for 18-20 minutes or until a toothpick comes out clean.

Let cool for 5 minutes before serving.
