- 2 cups of cooked corn kernels
- 1 can of black beans, rinsed and drained
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1 jalapeño pepper, seeded and finely chopped
- 1/4 cup of chopped fresh cilantro
- Juice of 1 lime
- 1/4 cup of olive oil
- Salt and pepper, to taste
Instructions

In a large bowl, combine corn, black beans, red onion, red bell pepper, jalapeño pepper, and cilantro.

In a small bowl, whisk together lime juice, olive oil, salt, and pepper.

Pour dressing over the corn and bean mixture and toss to coat.
