Ingredients
- 1 1/2 cups all-purpose flour
- 3 tbsp brown sugar
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- 1/4 tsp salt
- 1 cup pumpkin puree
- 1 1/4 cups milk
- 1 egg
- 2 tbsp melted butter
Instructions

In a large bowl, whisk together flour, brown sugar, baking powder, cinnamon, nutmeg, ginger, and salt.

In a separate bowl, whisk together pumpkin puree, milk, egg, and melted butter.

Pour wet ingredients into dry ingredients and stir until just combined.

Heat a non-stick skillet or griddle over medium heat.

Scoop 1/4 cup of batter onto skillet and cook until edges start to dry out and small bubbles appear on surface.

Flip pancake and cook until golden brown on both sides.

Repeat with remaining batter.
