Homemade granola made with nuts, seeds, oats, and dried fruits. Perfect for a healthy breakfast or snack.

Ingredients
- 2 cups rolled oats
- 1/2 cup chopped almonds
- 1/2 cup chopped pecans
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1/4 cup dried cranberries
- 1/4 cup dried apricots, chopped
- 2 tbsp brown sugar
- 1/4 tsp cinnamon
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1 tsp vanilla extract
Instructions

Preheat oven to 325F.

In a large bowl, mix oats, almonds, pecans, pumpkin seeds, sunflower seeds, dried cranberries, chopped apricots, brown sugar, and cinnamon.

In a separate bowl, whisk together melted coconut oil, maple syrup, and vanilla extract.

Pour the wet mixture over the dry mixture and toss until evenly coated.

Spread the granola mixture evenly on a baking sheet lined with parchment paper.

Bake for 30-35 minutes, stirring occasionally, until golden brown.

Remove from oven and cool completely before serving.
