A savory and delicious frittata with roasted butternut squash and fresh sage.

Ingredients
- 6 large eggs
- 1 cup roasted butternut squash, diced
- 1/4 cup chopped fresh sage
- 1/2 cup grated parmesan cheese
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 tbsp olive oil
Instructions

Preheat oven to 375°F.

In a large bowl, whisk together eggs, salt, and pepper until frothy.

Add in butternut squash, sage, and parmesan cheese and stir to combine.

Heat olive oil in a 10-inch oven-proof skillet over medium heat.

Pour in egg mixture and cook until the edges start to set, about 3-4 minutes.

Transfer skillet to oven and bake for 12-15 minutes, until the center is set.
