  • 6 large eggs
  • 1 cup roasted butternut squash, diced
  • 1/4 cup chopped fresh sage
  • 1/2 cup grated parmesan cheese
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F.

  2. In a large bowl, whisk together eggs, salt, and pepper until frothy.

  3. Add in butternut squash, sage, and parmesan cheese and stir to combine.

  4. Heat olive oil in a 10-inch oven-proof skillet over medium heat.

  5. Pour in egg mixture and cook until the edges start to set, about 3-4 minutes.

  6. Transfer skillet to oven and bake for 12-15 minutes, until the center is set.

  7. Slice and serve hot.
