How To Make Dates and Walnut Maamoul Recipe

Delicious date and walnut filled cookies with a crisp exterior served during Eid.

Serves:

Ingredients

  • 1 ½ cups of semolina flour
  • 2/3 cup of all-purpose flour
  • 1/2 tbs of active dry yeast
  • ½ cup of melted butter
  • 1/3 cup of sugar
  • 1/4 cup of milk
  • 1 tbs of rosewater
  • 1/4 tsp of cinnamon
  • 1/4 tsp of salt
  • 7 oz of pitted and chopped dates
  • 1/4 cup of finely chopped walnuts

Instructions

  1. In a large mixing bowl, combine semolina and all-purpose flour.

  2. Dissolve the active dry yeast in 2 tbsp of warm water and let it rest for a few minutes.

  3. In a separate mixing bowl, combine melted butter, sugar, and milk.

  4. Pour the butter mixture, yeast mixture, rosewater, cinnamon, and salt in the flour mixture and knead it until soft dough forms.

  5. Cover the dough and let it rest for 20 minutes.

  6. Meanwhile, prepare the filling by mixing chopped dates and walnuts in a separate bowl.

  7. Preheat the oven to 375 F.

  8. Take a small portion of the dough and flatten it on your palm, take the filling and shape it into a small ball and place it in the middle of the dough.

  9. Close the dough around it and shape it into oval or circular shapes, using your fingers or a maamoul mold.

  10. Line a baking tray with parchment paper and place each cookie on it.

  11. Bake for 20 minutes or until the bottom starts to turn golden.

  12. Let cool for a few minutes before serving.
