- 1 tbsp butter
- 1/2 onion, chopped
- 1 garlic clove, minced
- 2 tbsp flour
- 2 cups chicken broth
- 1 cup beer
- 2 cups shredded cheddar cheese
- 1/2 cup heavy cream
- salt and pepper to taste
Instructions

In a large pot, melt the butter over medium heat. Add the onion and garlic and cook for 5 minutes or until softened.

Whisk in the flour and cook for 1 minute. Slowly pour in the chicken broth and beer while whisking constantly.

Bring the soup to a simmer and let cook for 10 minutes.

Stir in the shredded cheddar cheese and heavy cream until melted and combined.

Season with salt and pepper to taste. Serve hot.
