Ingredients
- 4 medium potatoes, peeled and diced
- 1/2 cup diced celery
- 1/4 cup chopped onion
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped pickles
- 1/2 cup mayo
- 2 tbsp dijon mustard
- 1 tbsp apple cider vinegar
- 1 tsp sugar
- Salt and pepper to taste
Instructions

Boil the potatoes in salted water until fork-tender. Drain and let cool.

In a large bowl, combine the cooled potatoes with celery, onion, parsley, and pickles.

In a small bowl, mix together mayo, dijon mustard, apple cider vinegar, sugar, salt, and pepper to make the dressing.

Pour the dressing over the potato mixture and toss to coat.
