A hearty vegetarian stew with fluffy dumplings.

Ingredients
- For the stew:
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 stalks celery, diced
- 1 cup dry brown lentils, rinsed
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- For the dumplings:
- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp dried thyme
- 1/4 tsp dried rosemary
- 1/2 cup milk
- 2 tbsp butter, melted
- 1 egg, beaten
Instructions

Heat the olive oil in a large pot over medium heat.

Add the onion and garlic and sauté for 2-3 minutes until fragrant.

Add the carrots and celery and cook for 5 minutes until slightly softened.

Add the lentils, vegetable broth, thyme, and bay leaf.

Bring to a boil, then reduce heat and simmer for 30-35 minutes until lentils are tender.

In a mixing bowl, whisk together flour, baking powder, salt, thyme, and rosemary.

Add in milk, butter, and egg.

Stir until a sticky dough forms.

Drop spoonfuls of dough onto the surface of the stew.

Cover the pot and cook for 15-20 minutes until dumplings are cooked through.

Season with salt and pepper to taste.
