Creamy pumpkin cheesecake flavored with warm spices and a hint of orange, perfect for Halloween.

Ingredients
- 1 and 1/2 cups crushed graham crackers
- 1/4 cup unsalted butter, melted
- 2 tbsp brown sugar
- 2 (8 oz) packages cream cheese, softened
- 2/3 cup sugar
- 1 can pumpkin puree
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp allspice
- 1/4 cup orange juice
Instructions

Preheat oven to 375°F.

In a mixing bowl, combine crushed graham crackers, melted butter, and brown sugar. Press onto the bottom of a greased 9-inch springform pan.

In a separate bowl, beat cream cheese and sugar until smooth. Add in pumpkin, eggs, vanilla, spices, and orange juice. Mix well.

Pour mixture into prepared crust. Bake for 10 minutes, then reduce oven temperature to 300°F and bake for an additional 1 hour and 20 minutes, or until the center is almost set.

Turn off the oven, open the door a bit, and let the cheesecake cool inside the oven for 30 minutes.

Remove from oven and cool completely. Refrigerate for at least 4 hours or overnight.
