Serves:
Ingredients
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 can diced tomatoes (14.5 oz)
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 can black beans, rinsed and drained (15 oz)
- 1 can kidney beans, rinsed and drained (15 oz)
- Salt and pepper to taste
- 1 package frozen spinach (10 oz)
- 1 can black olives, sliced (6 oz)
- 1/4 cup sour cream
- Red food coloring
- Witch hat shaped chips for serving
Instructions

In a large pot, sauté onion and garlic until soft.

Add chicken broth, diced tomatoes, and herbs. Bring to a boil.

Add black beans, kidney beans, salt and pepper. Simmer for 30 minutes.

Add spinach and olives. Cook for another 10 minutes.

Remove from heat and stir in sour cream. Add a few drops of red food coloring to create a “bloody” effect.

Serve hot in a cauldron with witch hat shaped chips.
