How To Make Vegan Easter Chickpea Flour Quiche Recipe
A savory quiche filled with delicious veggies and made with chickpea flour. Perfect for a vegan Easter brunch!
Serves:
Ingredients
- 1 cup of chickpea flour
- 1 cup of water
- 1/2 tsp of salt
- 2 tbsp of olive oil
- 1/2 onion, diced
- 2 cloves of garlic, minced
- 1/2 red bell pepper, diced
- 1/2 zucchini, diced
- 1/2 cup of fresh spinach leaves
- 1/2 cup of cherry tomatoes, halved
Instructions

Preheat oven to 375°F.

In a large bowl, mix chickpea flour, water, and salt until smooth.

In a skillet, heat olive oil over medium heat. Add onion and garlic and sauté for 2-3 minutes until soft.

Add red bell pepper, zucchini, and spinach to the skillet and cook for another 5 minutes until veggies are tender.

Add the sautéed veggies to the chickpea flour mixture and stir well.

Pour mixture into a lightly greased 9 inch pie dish and top with cherry tomatoes.

Bake for 40 minutes until golden brown.

Allow quiche to cool before slicing and serving.
