How To Make Easter Salad with Quinoa and Avocado
A refreshing and healthy salad perfect for the Easter holiday.
Serves:
Ingredients
- 1 cup quinoa
- 2 cups water
- 1/4 tsp salt
- 1 large avocado, diced
- 1 cucumber, diced
- 1/2 red onion, sliced
- 1 red bell pepper, diced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 3 tbsp olive oil
- 3 tbsp lemon juice
- Salt and pepper to taste
Instructions

Rinse quinoa in a fine mesh strainer and put it in a medium-sized pot with water and salt.

Heat until boiling, then reduce heat and let simmer for 15-20 minutes until the liquid has been absorbed. Fluff with a fork and let cool.

In a large bowl, combine the cooled quinoa, avocado, cucumber, red onion, red bell pepper, parsley, and mint.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the salad and toss gently to combine.
