Ingredients

  • 2 large chicken breasts
  • Salt and pepper, to taste
  • 6 cups mixed greens
  • 1 cup sliced radishes
  • 1 cup sliced cucumber
  • 1 cup raspberries
  • 1/4 cup sliced almonds
  • 1/4 cup crumbled feta cheese
  • 1/4 cup balsamic vinaigrette

Instructions

  1. Season the chicken breasts with salt and pepper. Grill over medium-high heat for 6-7 minutes per side, or until cooked through. Let cool slightly before slicing.

  2. In a large bowl, combine the mixed greens, radishes, cucumber, raspberries, almonds, and feta cheese.

  3. Add the sliced chicken to the top of the salad.

  4. Drizzle with balsamic vinaigrette and lightly toss to combine.

  5. Serve immediately.
