These pancakes are a delicious and easy way to use up leftover mashed potatoes from your Easter dinner.

Ingredients
- 2 cups leftover mashed potatoes
- 2 eggs
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 tsp garlic powder
- Salt and pepper to taste
- 1/4 cup vegetable oil
Instructions

In a large bowl, beat together eggs, mashed potatoes, flour, Parmesan cheese, garlic powder, salt, and pepper until well combined.

Heat vegetable oil in a large skillet over medium heat.

Drop spoonfuls of the mashed potato mixture into the skillet and flatten with a spatula.
