This dish is a classic breakfast favorite made special with Easter-inspired ingredients.

Ingredients
- 4 medium sized potatoes, peeled and diced
- 1/2 red bell pepper, diced
- 1/2 yellow onion, diced
- 1/2 cup diced ham
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 4 eggs
- 1/4 cup chopped fresh parsley, for garnish
Instructions

In a large skillet, heat olive oil over medium heat.

Add diced potatoes and let cook for 10-12 minutes, stirring occasionally until potatoes are golden and tender.

Add onions and peppers and continue cooking for 5 minutes until they are soft.

Add ham, salt and pepper and stir to combine.

Make 4 wells in the potato mixture and crack an egg in each one.

Cover with lid and cook for 5-7 minutes or until egg whites are set.

Remove skillet from heat and sprinkle parsley over the top.

Serve hot.
