  • 1 cup of brown sugar
  • 1/2 cup of chopped almonds
  • 1/2 cup of grated carrot

  • 1/4 tsp of salt
  • 2 eggs

Instructions

  1. In a large bowl, combine the dried mixed fruit, breadcrumbs, plain flour, suet, brown sugar, chopped almonds, grated carrot, grated apple, orange juice, brandy, mixed spice, cinnamon, nutmeg, and salt.

  2. Mix well until all the ingredients are evenly distributed.

  3. In a separate bowl, beat the eggs and then add them to the fruit mixture.

  4. Stir until the mixture comes together into a thick batter.

  5. Grease a pudding basin and then pour the batter into it.

  6. Cover the basin with a layer of parchment paper and then a layer of aluminum foil, making sure it is tightly sealed.

  7. Place the basin in a large pot and add enough water to come halfway up the sides of the basin.
