How To Make Smoked Sausage and Corn Chowder Recipe

A hearty and comforting soup with smoky sausage and sweet corn kernels in a creamy broth.

Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 lb smoked sausages, sliced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups corn kernels, fresh or frozen
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 potatoes, peeled and diced
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot or Dutch oven, heat the oil over medium heat.

  2. Add the sliced sausage and cook until browned, about 5 minutes.

  3. Remove the sausage with a slotted spoon and set aside.

  4. Add the chopped onion and minced garlic to the pot and sauté until softened, about 3 minutes.

  5. Add the corn kernels, chicken broth, heavy cream, and diced potatoes to the pot.

  6. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.

  7. Use an immersion blender or transfer about half of the soup to a blender and puree until smooth.

  8. Add the reserved sausage back to the pot and season with salt and black pepper to taste.

  9. Simmer for a few more minutes until the sausage is heated through.

  10. Ladle the soup into bowls and garnish with chopped parsley.
