- 1 lb. andouille sausage, sliced
- 2 medium sweet potatoes, peeled and diced
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp dried thyme
- Salt and black pepper, to taste
- Chopped fresh parsley, for garnish
Instructions

In a large skillet, heat the olive oil over medium-high heat.

Add the andouille sausage and cook until browned, stirring occasionally, about 5 minutes.

Add the sweet potatoes, red bell pepper, onion, garlic, smoked paprika, thyme, salt, and black pepper to the skillet and stir to combine.

Cook until the vegetables are tender and the sausage is cooked through, about 15 minutes.
