How To Make Andouille Sausage and Peppers Pasta Recipe
A spicy and flavorful pasta dish packed with Andouille sausage and mixed peppers.
Serves:
Ingredients
- 12 oz. Andouille sausage, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1/4 tsp dried oregano
- Salt and black pepper to taste
- 12 oz. penne pasta
- 1/4 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions

Cook penne pasta according to package instructions, drain, and set aside.

In a large skillet over medium-high heat, add olive oil and Andouille sausage. Cook until browned on both sides, about 5-7 minutes. Remove sausage and set aside.

In the same skillet, add peppers, onion, and garlic. Cook until vegetables are tender, about 5-7 minutes.

Add cooked sausage back into the skillet with the vegetables. Add in paprika, oregano, cayenne pepper, salt, and black pepper. Stir to combine.

Add cooked pasta into the skillet with the sausage mixture. Toss everything together until the pasta is coated in the sauce.

Sprinkle grated Parmesan cheese on top and garnish with fresh parsley.
