How To Make Andouille Sausage and Black Eyed Peas Recipe
A savory and spicy combination of andouille sausage and black-eyed peas that’s perfect for a hearty meal.

Ingredients
- 1 lb andouille sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups dried black-eyed peas, soaked overnight and drained
- 6 cups chicken broth
- 1 tsp Cajun seasoning
- Salt and pepper, to taste
Instructions

In a large pot or Dutch oven, cook the sliced andouille sausage over medium heat until browned. Remove and set aside.

In the same pot, sauté the chopped onion and minced garlic until translucent.

Add the soaked and drained black-eyed peas, chicken broth, Cajun seasoning, and salt and pepper to taste.

Bring to a boil, then reduce heat and simmer for about 1 hour and 15 minutes, or until the peas are tender.

Add the browned andouille sausage back to the pot and simmer for an additional 15 minutes.

Serve hot with cornbread or rice.
