How To Make Pepper-Crusted Salmon with Garlic Chickpeas

Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tbsp black peppercorns, crushed
  • 1 tbsp olive oil
  • 1 tsp salt
  • 2 cans chickpeas, drained and rinsed
  • 3 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Season the salmon fillets with salt and press the crushed peppercorns onto the flesh side.

  3. Heat olive oil in a large skillet over medium-high heat. Place the salmon fillets, skin side down, and cook for 2-3 minutes until the skin is crispy. Transfer the fillets to the prepared baking sheet, pepper side up, and bake for 10-12 minutes or until cooked through.

  4. In the same skillet, add minced garlic and sauté for 1 minute. Add the drained chickpeas, lemon juice, paprika, and cayenne pepper. Cook for 5 minutes, stirring occasionally, until the chickpeas are heated through.

  5. Serve the pepper-crusted salmon on a plate with a generous portion of garlic chickpeas.
