Ingredients
- 4 salmon fillets
- 2 leeks, sliced
- 1 large onion, thinly sliced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 bunch fresh parsley, chopped
- 1 lemon, juiced
- 2 tablespoons capers
Instructions

Preheat oven to 400°F (200°C).

In a large oven-safe pan, add the sliced leeks and onions. Drizzle with olive oil and season with salt and pepper. Toss to coat.

Place the salmon fillets on top of the leeks and onions, skin-side down. Season with salt and pepper.

Roast in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

In a small bowl, mix together the chopped parsley, lemon juice, and capers to make the dressing.

Remove the pan from the oven and drizzle the parsley dressing over the roasted salmon.
